Potatoes are always an easy side dish to throw together to add to a meal. Plus you can make them in quite a few different ways!

With this roasted potatoes recipe, it develops a lot of great flavor from the pesto sauce. And to knock the flavor out of the park, we even make them up ahead of time and throw the potatoes in the fridge to let them marinate even more in the pesto.

Since potatoes are so versatile, we have a lot of great recipes staring all different kinds of potatoes. TIME TO MAKE THIS SIMPLE YET DELICIOUS PESTO RECIPE!

Start this recipe by preheating the oven to 450 degrees

Fahrenheit.

Then scrub your russet potatoes (no peeling necessary) and then cut the potatoes into large cubes.

Next, in your large ziplock bag, add in the cut-up potatoes and the pesto sauce.

Shake everything together to make sure that all of the potatoes get covered in the pesto sauce.

PRO TIP: If you want to enhance the flavor of the potatoes even more you can throw the bag in the fridge for a few hours and let them marinate! But it is not 100% necessary for this recipe, they will still taste great if you don’t.

Now, pour all the contents onto the baking sheet and spread the potatoes out evenly.

Once that is done, sprinkle the Parmesan cheese on top and place them into the oven for 25-30 minutes or until the potatoes are golden.

DO YOU NEED TO HAVE RUSSET POTATOES?

No, you do not! These would work great with redskin potatoes or Yukon golds as well! Or really any potato for that matter. If you ask me all potatoes are delicious and would work well with this recipe!

  • 5 medium russet potatoes
  • 1 10 ounce jar pesto sauce
  • 3/4 cup parmesan cheese

Instructions

  • Preheat oven to 450 degrees

  • Scrub (but don't peel) potatoes and cut into large cubes. Place cut potatoes in a large Ziploc bag

  • Add pesto sauce to the bag and shake until all of the potatoes are coated. Pour contents out into a baking sheet and spread out evenly.Sprinkle on Parmesan cheese

  • Bake for 25-30 minutes, or until potatoes are golden

    These got rave reviews from everyone!! I used a lot more homemade pesto and I didn't skimp on the parmigiana reggiano (closer to a cup or more). I also let them marinate in the pesto for close to an hour before baking. Absolutely scrumptious! TY
